Do you ever catch yourself having one of those soup and sandwich cravings? No? Yeah, me neither.
Until this one time Henry mentioned wanting a soup and sandwich, and my mouth immediately watered while thinking about this chicken salad sandwich. I’m not usually one for cold sandwiches—I normally like them hot and toasted. You’ll never see me at Subway getting a cold-cut sandwich, or refuse to have my bread toasted. I’ll take the chicken bacon ranch sandwich right out of the oven, please. Growing up my mom would always pack up either an egg or tuna salad sandwich for me at least once a week, and even with that I’d need it warmed up before I could enjoy it.
It wasn’t until I tried this recipe, that I had a whole different perspective on cold sandwiches. Not only is it delicious, but it’s so easy to put together as a meal prep, as you don’t need to warm this up to enjoy it. And if you’re not one for toasted bread, that’s even easier!
This sandwich filling incorporates almost everything you’d think to put in a salad sandwich: chicken, eggs, & veggies. No tuna here though, because tuna mixed with anything else just really doesn’t jive.
Inspired by a recipe from one of my favorite recipe books, I made some tweaks and excluded a few ingredients I’m not too fond of, like peas and parsley. This recipe packs some serious flavour, and a ton of protein to help you make those gainz. Or just to fill you up. Whatever floats your boat.

Easy Chicken Salad Sandwich
- 1 cup diced red pepper
- 1 cup diced celery
- ½ cup green onions, sliced
- 4 cups of cooked chicken – I use a cooked rotisserie chicken from the grocery store, excluding the skin
- ¼ cup sliced almonds
- 4 hardboiled eggs, chopped up
- ¾ cup lemon flavoured yogurt
- ¼ cup light mayonnaise
- 1 tablespoon honey Dijon mustard
- 3 tablespoons white vinegar
- 2 tablespoons fresh dill, minced
- Salt & pepper to taste
Whisk all dressing ingredients together in a large mixing bowl. Once mixed through, add all other ingredients and mix until fully covered with dressing. Squish between two pieces of whole grain bread and devour. Easy peasy!
